Wine and cheese make the perfect pair for any dish! Lush Lola's owner Shannon Malzahn shows us how to make cheese and wine fondue!
1/2 pound Swiss cheese, shredded
1/2 pound Gruyere cheese, shredded
1-1/2 tablespoons cornstarch
1 garlic clove, peeled or minced
1 cup dry white wine (Chardonnay and Pinot Grigio work well)
-In a small bowl, coat the cheeses with cornstarch and set aside. Rub the inside of the ceramic fondue pot with the garlic clove and discard or add up to one clove minced in the pan.
-Over medium heat, add the wine and bring to a gentle simmer (do not boil). Gradually stir the cheese into the simmering liquid. Melting the cheese gradually encourages a smooth fondue. Once smooth, you can transfer to a fondue pot to hold the cheese at a low heat.
-Arrange an assortment of bite-sized dipping foods around the fondue pot.
-Serve with chunks of French bread, Granny Smith apples and blanched vegetables such as broccoli, cauliflower, carrots and asparagus.
