North Dakota Today: Pumpkin Applesauce Muffins

Pumpkin pie might be the star of any Thanksgiving dinner, but you can also make a healthy pumpkin dessert! Family Wellness healthy cooking instructor Nicolle Dew shares a quick recipe for pumpkin applesauce muffins.

Pumpkin applesauce muffins/bread:
1 ½ C White whole wheat flour
1 T pumpkin pie spice
1 tsp baking soda
¼ tsp baking powder
½ tsp salt
2 eggs
1 C pumpkin puree
½ C unsweetened applesauce
½ C honey
1 tsp vanilla extract

For the streusel topping:
1/4 C oats
¼ C brown sugar
2 T butter, melted
1 T flour

Cooking Instructions:
Preheat oven to 350 degrees
Spray a 9x5 bread pan with cooking spray or prepare a muffin tin with paper liners.
Mix the dry ingredients in a bowl.
Mix the wet ingredients in another bowl.
Combine the two bowls and mix well. Pour into pan.
Make the streusel: Mix all ingredients and sprinkle on top.
Bake at 350 for 40-50 minutes (bread) or 20 minutes (muffins).
