The New England Patriots and Los Angeles Rams will be going head-to-head on Sunday to see who will take home the 2019 Super Bowl trophy. To get us ready for the big day, Family Wellness showed us some recipes that are sure to be a touch down at any Super Bowl party.
Mexi Corn Dip:
3 cups corn, frozen or fresh
1 can diced mild green chiles, or sub jalapenos
1 cup plain non-fat or 2% Greek yogurt
1/2 cup Mexican Blend cheese
1 1/2 tsp chopped fresh cilantro (optional)
1/2 cup diced red bell peppers
1/4 cup light mayonnaise
2 green onions, thinly sliced
Juice of 1/2 lime
1 tsp. chili powder
1/2 tsp. garlic powder
Mix all ingredient together in a bowl until well combined. Taste and season as desired.
Serve with blur corn tortilla chips.
New England Clam Chowder Soup:
2 6.5 oz cans Clams (chopped finely, liquid retained)
1 Ib. Cauliflower (florets only, cut in small pieces)
1/2 cup unsweetened almond milk
1/2 cup chicken broth
1 cup heavy cream (or coconut cream)
1 tsp. sea salt
1/4 tsp black pepper
Combine all ingredients, except heavy cream, in a large pot. Make sure you pour the retained liquid from the clams in there, too. Bring to a boil.
Reduce heat and simmer for 10-15 minutes, until cauliflower is tender.
Stir in the heavy cream. Heat just enough for the soup to be hot again.
6 oz. light cream cheese or silken firm or extra-firm tofu drained
1/4 cup confectioners' sugar
1 tsp. vanilla extract
1/2 tsp. grated orange zest
1 can, diced pineapple
2 sliced bananas
3/4 cup fresh blueberries
1/2 cup fresh sliced strawberries
Serve with sugar cookies or sliced apples
Blend cream cheese or tofu and confectioners' sugar in a food processor for 3 minutes. Add vanilla and orange zest, and pulse until combined.
Spread cream cheese mixture over sugar cookies or sliced apples and add fruit as toppings.
