Avocado chocolate truffles

•1 ripe avocado
•5 oz 70% dark chocolate, melted
•2 tbsp. coconut sugar
•1/4 tsp vanilla extract
•1/8 tsp salt
•1 1/2 tbsp. cacao powder
• To roll - cacao powder, coconut or diced nuts

1.Combine all ingredients in food processor, and blend until smooth
2.Transfer into bowl and refrigerate at least 30 minutes
3.Roll into 1 inch balls
4.Roll in desired topping
5.Refrigerate until ready to serve
