Spinach Ricotta Prosciutto Mini Cups
2 cloves garlic, minced
1 cup fresh chopped spinach
1 cup ricotta cheese
½ pound prosciutto
Black pepper to taste
Preheat oven to 350
Mix together garlic, spinach, ricotta, and egg. Set aside
Cut prosciutto into three pieces crosswise.
Line mini muffin tin cups with prosciutto sp that bottom and sides are covered.
Fill each cup about ¾ full of filling
Bake 25 minutes, or until prosciutto is lightly brown and stiff to the touch.
Remove from oven and sprinkle with pepper to taste.
Let cool 5 minutes before serving
Sweet Potato Bacon Dip
Makes 1 cup, serves 8
2 sweet potatoes, roasted or softened in microwave
2-4 slices of bacon
1 small shallot, finely chopped
¼ tsp smoked paprika
Green onions for garnish
Salt to taste
Peel potatoes, cut into chunks
Cook bacon until slightly crispy, set aside
Add the shallot and sweet potato to the pan and cook in bacon fat until the shallot is slightly browned
Scrape all contents from pan into food processor
Add paprika and salt and blend until smooth
Crumble in bacon and garnish with green onion
Serve warm or cold with crackers, veggie sticks or apple slices!
Makes 8 skewers
8 oz fresh mozzarella
16 grape tomatoes
16 fresh basil leaves
16 slices salami
16 slices coppa, or other cured meat like prosciutto
Can artichoke hearts packed in water, cut in half
16 Kalamata olives
¼ cup vinaigrette made with olive oil and apple cider vinegar
Salt to taste
Cut mozzarella into 16 small chunks
Skewer 2 pieces of each ingredient, folding the basil in half
Plate, and drizzle with dressing and sprinkle lightly with salt
