NDT- Cooking with Cash-Wa – Mashed Lentils with toasted garlic & shallot butter (Bacon Wrapped Steak)
FARGO, N.D. (Valley News Live) - Mashed Lentils (Keto Friendly Mashed Potato Alternative)
Yield: 4 - ½ Cup servings
1 C Masoor Dal (Orange/Yellow Lentils)
3 C Water
1 tsp dried Turmeric
½ Shallot, sliced very thin
2 cloves garlic, sliced very thin
1 stick whole butter
Salt and pepper
Bring lentils, water, and turmeric to a boil. Reduce to a simmer and cook lentils covered until very tender, about 35 minutes. This can also be cooked in an instapot or pressure cooker too. Stir the lentils every so often to keep them from sticking together. Once cooked, use a whisk to give the lentils a mashed appearance over low heat. Add water if needed. Season with salt and pepper. Set aside or cool to serve later.
When ready to serve, melt butter a 12″ sauté pan over medium low heat. Add the shallots and butter. Cook, stirring occasionally until both the shallots and garlic are golden brown and toasted. Add the reserved lentils to warm. Season with salt and pepper.
