NDT- Cooking with Cash-Wa – Mediterranean Turkey Burgers
FARGO, N.D. (Valley News Live) -Mediterranean Turkey Burgers
Yield: 6 / 5.33 oz patties
2 lbs. Turkey Thigh Meat or Ground Turkey
1 cup Muffuletta Olive Salad (See Recipe above)
1 ea. Egg White
¼ C. Parmesan Cheese
¼ C. Breadcrumbs
¼ C. Feta Cheese
6 ea. Brioche Buns
6 pcs. Bibb or Boston Lettuce
6 Slices Fresh Tomato
6 Sliced Red Onion
Extra Muffuletta Salad
Mix all the ingredients over a bowl of ice. If using turkey thigh meat, pass through a meat grinder using a medium-fine die into another bowl over ice. Allow the mixture to rest for 15 minutes refrigerated.
Form Patties using a large pastry cutter onto a cooking sheet lined with plastic film wrap. (see video)
Once all the patties are formed, allow them to rest refrigerated until ready to cook. The patties can be frozen at this point too. Place the whole cooking sheet in the freezer and then once frozen, vac seal or wrap in plastic film. Allow the turkey burgers to thaw fully prior to cooking.
Cook the turkey burgers to 165° F over medium heat on a grill, griddle, or oven. Serve on a platter with the other remaining ingredients and allow your guests to choose their toppings.
