NDT- Cooking with Cash-Wa – Crab Fritter
FARGO, N.D. (Valley News Live) - INGREDIENTS:
2 tablespoons butter 1/2 small yellow onion, minced ¼ red bell pepper, minced ¼ green bell pepper, minced 2 cloves fresh garlic, minced 1 cup sweet corn 2 teaspoons Old Bay Seasoning ¾ cup milk 4 large eggs 1 ½ cups all-purpose flour ½ cup cornmeal 2 teaspoon baking powder 1-2 Tablespoons Fresh Herbs, optional (chives, tarragon, parsley) 8 oz lump blue crab DIRECTIONS
Sweat the shallots, peppers, garlic, and sweet corn in a sauce pan over medium-low heat until soft and tender, but not browned. Add Old Bay spice mix and cool.
In a small bowl, Whisk the egg until frothy. Add the vegetable mixture followed by the flour, cornmeal, and milk. Stir to just enough to combine. The mixture should be just firm enough to scoop, yet lumpy. Allow the mixture to stand for 10-15 minutes and allow the gluten to relax and the cornmeal to fully absorb the liquid. Meanwhile, heat oil in an electric deep fryer or Dutch oven to 350° Using 2 tablespoons (or a 1 oz portion disher), carefully drop a heaping tablespoon into 350°F hot oil and cook until golden brown. Drain on paper towels and server immediately.
You can cook these up earlier in the day and quickly reheat in a 425° F or air fryer to reheat.
