NDT- Cooking with Cash-Wa – Breakfast Scones
FARGO, N.D. (Valley News Live) - This is the perfect quick and easy post-Thanksgiving breakfast item for Black Friday warriors on the go or kicking back, staying home, and munching with bloody Mary’s or mimosas. This recipe is easily adaptable using bacon, turkey ham, breakfast sausage and most cheeses. Add Cajun spice, smoked paprika, fresh herbs, caramelized onions, etc. Make it your own!
· 4 cups all-purpose flour
· 2.5 tablespoons baking powder
· 1 teaspoon baking soda
· 2 teaspoons salt
· ½ teaspoon cayenne pepper (optional)
· 7 ounces shortening or butter
· 2 cups diced ham
· 2 cups shredded cheddar cheese (8 oz)
· 1 bunch sliced green onions (green parts only)
· 2 cups buttermilk
Preheat oven to 400° F. Line or grease baking sheet with food spray. Set aside
Measure the flour and remaining dry ingredients in a medium mixing bowl and whisk together. Cut in (rub) shortening or butter into the dry ingredients until it resembles coarse cornmeal. Add the ham, cheese, and green onions, mix to distribute. Add the buttermilk and mix just enough to form a loose sticky dough.
Using a 2″ disher or two spoons, drop about ¼ cup of dough onto the grease pan about 1″ apart. Repeat with remaining dough.
Bake for 15-20 minutes until golden brown and firm but not hard. Let rest for 5 minutes, transfer to basket or cooling rack.
