FARGO, N.D. (Valley News Live) - Grilled Walleye Burgers w/ Avocado & Mango Salsa

Yield: 16 biscuits

Walleye is very popular in our area and what better way to bring this favorite to your customers. This 4 oz burger patty is 100% walleye without out any fillers or binders. It is made from large Canadian caught fillets and formed into patties using a proprietary technique. Bring an innovative, value driven, and healthy alternative to you regulars and use it to drive increased sales with a solid gross profit margin. These patties grill extraordinarily well. Cook to an internal temperature of 145°F but pull at 140°F to allow the fish rest and carryover to target temperature.

· 4 each John O 4oz Walleye Patty (Cashwa Item #3078)

· 4 T Extra Virgin Olive Oil

· To taste Salt and pepper

· 4 T Mayonnaise

· 1 T Fresh Cilantro, chopped fine

· 1 tsp. Lime zest

· 4 ea. 4.5″ Brioche Buns

· 2 ea. Fresh Avocados

· ¾ cup Mango Salsa

Make the Spicy Cilantro Mayo

Mix the chopped cilantro and lime zest with the chipotle mayonnaise. Keep refrigerated.

Grill and Serve the Walleye Burgers

Preheat a char broiler / gas grill to medium high heat. Clean any excess buildup off the grill.

Coat each frozen walleye patty with a small amount of olive oil. Season both sides and place on the grill. Cook for 5 minutes, then turn patty approximately 90 degrees and cook for another 5 minutes. Flip and repeat the process until the burger has reached internal temperature of 140 degrees.

Meanwhile, toast both sides of the bun. Smear each bottom of the bun with 1 tablespoon of the chipotle mayo. Top with the walleye burger, followed by ½ avocado sliced at a bias. Finish with the salsa and serve.
