Chef Chris D'Agostino: Garlic Shrimp

Garlic Shrimp with Bacon and Cheddar Grits

2.5 cups chicken stock

2/3 cup stone ground corn grits

3 strips cooked bacon- chopped

1 tbsp sliced chives

1 cup shredded sharp cheddar cheese

salt and pepper to taste


8 large shrimp- peeled and deveined- raw

1tbsp olive oil for sautéing

1 tbsp minced garlic

1 tbsp lemon juice

1 tbsp white wine

1 tbsp heavy cream

pinch of sugar

4oz unsalted butter-cubed 

Bring the chicken stock to a simmer in a medium sauce pan.  Slowly whisk grits into stock with heat on low.  Simmer grits for about 10 minutes while periodically stirring.  Add chopped bacon, chives and cheddar.  Stir until cheddar is melted.  Meanwhile, in medium sauté pan heat olive oil.  Season shrimp with salt and pepper and add to pan.  Cook shrimp on both sides then add garlic to pan.  Saute garlic briefly then add wine, lemon, cream and sugar to pan.  Remove shrimp once they are fully cooked. Continue to cook liquid in pan until syrupy consistency.  Take pan off heat and slowly add cubed butter.

Return to heat while stirring constantly, being sure not to simmer butter sauce.  Add all butter until fully incorporated.  Season with salt and pepper.  Put grits in middle of plate then place shrimp around grits.  Lastly, pour sauce over shrimp and grits.  Enjoy.  Serves 2 people as an entrée or 4 people as an appetizer.
