Making Citrus Salsa

Citrus Salsa

Serves 4-6 

3 oranges

3 lemons

3 limes

2 grapefruits, ruby

1 tablespoon chopped jalapeno

2 tablespoons fresh cilantro, chopped

2 tablespoons red onion, chopped

2 tablespoons olive oil

Salt and black pepper, to taste  

Prepare all citrus by removing zest and pith using a small utility or paring knife.  Segment all citrus and place in a medium size bowl.  Add jalapeno, cilantro, red onion, olive oil, salt and pepper.  Mix gently and allow to marinate under refrigeration for approximately 30 minutes. 

Serve with fish, chicken or pork as an entrée accompanied by quinoa, rice or cous cous.
