Italian Pandoro Christmas Tree Cake

Tony's Pandoro Christmas Tree Cake

 Special Ingredient:
1 box Pandoro Italian Specialty Cake (available locally at T.J. Maxx – this is similar to, but NOT the same, as Panettone)

 For The Whipped Mascarpone Filling: 


2 cups Mascarpone Cheese

2 cups heavy cream

¼ cup sugar

1 teaspoon vanilla


Using an electric mixer with whip attachment(s), mix all ingredients on high until thick and fluffy, about 2 to 3 minutes.

 To assemble the cake:
Use a bread knife to cut the cake horizontally into 4 slices of equal height, about 1 ½-inch thick. Starting with the bottom piece, spread a generous amount of the whipped mascarpone filling on the top of each piece. Place the pieces back together, but layer them so that the points are alternating to resemble a Christmas tree.

 Adorn with red and green candied cherries, raspberries, blueberries, or any other colorful items as desired. Dust with cocoa powder and a generous heaping of powdered sugar. Top with a star-shaped cookie, candies, or fresh mint.
