A Moorhead woman won $10,000 thanks to her recipe using JIF peanut butter.
"Peanutty Chicken Pad Thai Sliders" recipe was chosen as the winner in the Savory category and will receive $10,000 towards a kitchen makeover.
In November 2011, Jif invited consumers to submit original, crowd-pleasing recipes in either the Sweet or Savory category. Recipes were required to include at least two tablespoons of Jif Peanut Butter and yield at least six servings. Dishes were judged on taste, creativity and ease of preparation. Sonya's recipe was chose from hundreds of entries that put a delicious, peanutty twist on classic dishes.
Peanutty Chicken Pad Thai Sliders
Patties
2 pounds ground chicken
¼ cup grated white onion
3 cloves minced garlic
½ cup chopped cilantro leaves
1 teaspoon Chinese 5 spice powder
2 tablespoons olive oil
Peanut Pad Thai Sauce
1 tablespoon cornstarch
2 tablespoons fish sauce
1/2 cup Jif crunchy peanut butter
1 tablespoon vinegar
1 teaspoon chili sauce
3 tablespoons brown sugar
Remaining Ingredients
1 cup bok choy or other Chinese cabbage, shredded
½ cup bean sprouts
½ cup carrots, cut into matchstick pieces
½ cup scallions, sliced
20 slider rolls
Directions
Preheat an indoor grill to medium high heat.
To make the patties, combine chicken, grated onion, garlic, cilanrtro and seasonings in a large bowl. Shape into 20 slider patties and drizzle with olive oil.
In a small saucepan, combine cornstarch, fish sauce, Jif Extra Crunchy peanut butter, vinegar, chili sauce and brown sugar. Bring to a boil. Reduce heat to low and simmer for three minutes. Remove from heat and allow to cool.
Place slider patties on indoor grill, place cover down and cook 3-4 minutes. Place burgers on a platter and cover with foil to keep warm.
Combine vegetables with pad thai sauce in large bowl.
To assemble the burgers, place the roll bottoms on a serving platter and top with burger patties. Spoon over equal portions of the pad Thai vegetable mixture. Add the slider roll tops and serve.
Recipe serves 10 (2 sliders per person) and can be prepared in less than one hour.
